Simple Vinaigrette
Yield: 24 Portions
1 Tbsp oz Minors Saut?ed Vegetable Base
1 Tbsp Dijon mustard
1/4 cup Vinegar, red wine
3/4 cup Extra virgin olive oil
1. Thoroughly whisk together Minors Saut?ed Vegetable Base, mustard, and vinegar.
2. While whisking vigorously slowly drizzle in olive oil until dressing is emulsified.
Use to dress almost any type of salad: Root vegetable and grain, greens, bean salad, etc.
Buddha Bowl with Roasted Root Vegetables and Spelt
Yield: 10 Portions
2 Tbsp Minors Saut?ed Vegetable Base
2 cups Spelt, rinsed
8 oz each - peeled, 1/2" dice - Celery root, Carrot, Parsnip, Beet, Sweet potato, Onion
8 oz Onion, 1/2 dice
12 oz Vegetable Oil
1. In a large pot over medium heat, bring water and Mirepoix concentrate to a boil. Add spelt, stir, cover, and reduce heat to low. Simmer about 90 minutes until spelt is tender with a slight bite. Remove, keep warm.
2. In a large bowl, add celery root, carrot, parsnip, beet, sweet potato, onion, and oil; toss to coat. Season with salt and pepper. Press root vegetable in an even layer onto a sheet pan, place into a 375?F preheat oven for 20-25 minutes or until vegetable are tender and dark golden brown.
3. Place spelt in bowls and top with roasted vegetables. Top with your choice of broth or sauce.

Yield: 10 Portions
1 cup Vegetable oil
1/2 cup, Rice vinegar
1/2 cup, Red onion, fine diced
2 tsp Minors Saut?ed Vegetable Base
4 cups Mango, ripe, peeled, pitted, diced
2 cups Apples, peeled, cored, small diced
1 cup Red bell pepper, small diced
2 Tbsp Chili pepper, Jalape?o, fine diced
In a medium bowl, combine vegetable oil, rice vinegar and Saut?ed Vegetable Base using a wire whip until well blended. Fold in mangoes, apples, red peppers, onion and jalapeno. Chill and hold in refrigerator for service. Use on fish, or serve as a garnish.
